Happy September, friends! I come to you today with a delicious summer salad recipe from my husband! Jordan and I love to cook together- he's usually the one who likes to adhere to a recipe but he said he had a "moment of inspiration" and this salad came to fruition. 😉The salad is simple but SO GOOD! I am betting you have a lot of these ingredients close by. The only ingredient that may be new to you is mimolette cheese. As I wrote in the recipe it's completely fine to exclude, it just adds a really unique/nutty flavor.

Ingredients

~6 cups mixed greens

1 peach, sliced thin

1 avocado, diced

~1/4 cup of mimolette* shredded

~6 dollops of 1/2 tsp ricotta

1/4 red onion, diced

 

Dressing

1.5 Tbsp Extra Virgin Olive Oil 

2 tsp balsamic vinegar

1/8 tsp onion powder 

1/8 tsp dried onion flakes 

1/8 tsp garlic granules 

dash of red pepper, black pepper, and salt

*Mimolette is what I would consider fancy cheese! ;) It has a unique, nutty flavor and texture. The salad will still be great without it, but if you're able, I highly recommend trying it! You will find it at the cheese counter. 

Instructions

-Add the mixed greens as your base, and sprinkle on your toppings of peaches, avocado, red onion, and cheeses (disperse the ricotta in small dollops over the salad). 

-Mix your dressing together, pour over, voila.
